Cabernet Sauvignon Grape

A small matt dark-blue grape variety with a thick skin. The juice is very aromatic. In a typical cabernet sauvignon you will smell and taste black currants, pure chocolate and mint. In the aroma you will specifically find violets, cedar and pencil. The relation of pips and flesh of the grape is extremely high: 1 to 12. Next to the skin, the pips are the most important source of tannin of the wine. The tannin makes this grape very suitable for ripening on oak barrels. This makes the bitter tannin souple and soft. When grown in a too cool climate, this variety tends to give wines that are not ripe and somewhat thin. A too hot climate, on the other hand, makes the wine a little flat and gives the smell and taste of cooked fruit.

Grape Variety: 33% Tempranillo, 33% Cabernet Sauvignon & 33% Syrah. Rich Red cherry colour with a fruity flavour and consistent mature tannins. This is an excellent value wine which goes well with all meats. This wine is kept for 8 months in new French & American Oak before being bottled.

Grape: 85% Tempranillo, 15% Cabernet Sauvignon. Maturing in American Oak casks for 20 months and a further 24 months in bottle. Medium smooth body with intense red cherry and maroon shades that leaves a pleasant mature taste on the pallet.
